Country Dancing, Western Wear, Restaurants in Las Vegas this Spring, 2019

Our blog this time is about a special trip.  Check out our individual reviews of Gilley’s, Stoney’s and Saddles N Spurs.  Quite a variety and each with their own specialness.

So, on this trip we celebrated our Anniversary.  We like to go to places where there are multiple (if possible) places to dance, different foods, activities, art/floral displays.  This time, I was on the hunt for a special dessert to celebrate our anniversary.  Our usual choice is something that is chocolate in some way, Ok?  And I have a passion for cake.  We found our dessert at Bellagio’s Spago The dessert is called Spiked Lemon.  Wow, we chose “not chocolate”.  It is a light chiffon cake filled with citrus mousse.  It was amazing!

We also saw the Japanese themed cherry blossom spring floral display in Bellagio’s Botanical Conservatory.  It was a beautiful display of cherry blossoms, a Japanese palace, cranes, butterflies and orchids.  Bellagio has seasonal displays year around.  Great job this Spring!  Oh, and a shoutout to the Mirage for a great room and a great stay!

Then we visited our first Boot Barn Superstore in Las Vegas.  It definitely offered a variety in apparel, boots, hats etc.  There were so many choices. Beautiful patterns, colors and styles.  Jeff found a western jacket with matching pants and three shirts at Cowtown.  I found a pair of jeans with sparkly flowers on the pockets and three tops (short sleeve, long sleeve and sleeveless) at the Boot Barn Superstore (lots of name brands too). Can’t wait to wear them!  Oh, I forgot to mention our shopping spree was during the Memorial Day weekend so there were sales!  Yippee!

Breakfast: Blueberry Hill Family Restaurant – delicious pancakes, waffles, French toast, omelets, eggs, ham, sausages, bacon, hash browns and biscuits & gravy!  Just stay away from the crepes, it’s not a French place nor gourmet, it’s just a down home place that’s darn good.  Lunch/Dinner: For those of you who are Vegan or just like plant-based food every now and then, we had lunch at VegeNation.  Great food.  We had Buffalo Wings made out of cauliflower!  It’s not chicken it’s a plant so just be open to that kind of Yum!  Jeff had a quesadilla made out of white sweet potatoes and a black beans topped with chipotle ranch and guacamole.  He was “pleasantly surprised.”  I really got into it too.  I had the power protein tacos made with ground walnuts, sun dried tomatoes, and sunflower seeds, wrapped in collard green (the stuff your mama would’ve said, “sticks to your ribs!”) tortillas topped with jicama slaw and chili vinaigrette.  I know, it may sound gosh awful but it was really tasty.  Besides, just knowing it is providing good nutrition is an added plus.  There are a load more eating places in Las Vegas and we will review them each time we go back!

Hello Country Western Dancers,

My name is Jeff Evans and today is the second edition of my new blog. I am writing this blog to help you understand the fun and benefits of CW dancing as I have experienced it over the last 4 years. You’ll hear all about both the highlights and low lights, and there have been plenty of both, lol.

About me.

I grew up in California, Texas, Pennsylvania and Arizona, the last forty five years in CA. I majored in Finance in College and have a BBA and MBA. I have spent most of my life involved in sporting activities such as HS football, Collegiate wrestling (ASU), outrigger canoe racing (35 yrs), skiing, and surfing. I have also been very interested in nutrition and fitness all of my adult life, and I’m 70 years old now. My business career has included working for an major integrated oil co, several stock brokerage firms (including Morgan Stanley), and owning a small gift-ware mfg co. Whew…and now I am retired :).

Why am I doing this?

Carol and I have been dancing for a few years now. We have experienced the many wonderful benefits of CW dancing and we want to share what we’ve learned (so you can have these fun experiences too)! For us, the benefits have been lots of fun, inexpensive nights out at very nice dance places around Southern California. We have also enjoyed lots of travel to cities around the US dancing at really fun places and meeting lots of nice people. We go where the dance places are and explore the sights and sounds of the entire city and surrounding areas. We have been to Canada, Arizona, Nevada, Colorado, South Carolina, Georgia, Texas and, of course, our home base of California. BTW, you can read our reviews of these dance venues at our website bootscootinreview.com. We have also learned that getting the most out of dancing requires fitness and mobility, in order to get the most out of dancing, walking and hiking while sightseeing. So it requires a certain level of fitness and wellness that will make every part of your life better! We are all about helping you step-by-step get fit and be nutritionally sound while having fun fun fun! The fitness benefits you get from dancing one or two nights a week are amazing. But, you will have to build this up by doing a few extra things at home. I will be offering my thoughts and ideas on nutrition, fitness and best practices to help you reach your goals.

BTW, have you been working on your first baby step? I mentioned it in my last blog, do you remember? It was start every morning with the thought, “I’m going to make this the best day it can be!” I personally think this every day and it works! :))

I told you I want you to get excited about another new step today, so we are going to talk about nutrition and a new recipe from Carol that is very nutritious, healthy and easy to make. It is a delicious 13 Bean Soup! But before I give you the recipe, I want to talk a little about the basics of nutrition and how you will benefit from this new recipe.

NUTRITION

Legumes and you.

The three goals of this blog are Fun, Fitness and Nutrition. We love to Country Dance and want to be able to do so into our eighties. By making several easy changes to your diet, you can start on the road to better fitness, mobility, and longevity. It all starts with the food you eat everyday.

First, health and wellness come from eating the basic food groups.

These are the major food groups: fruits, veggies, grains, legumes, proteins (from fish, meat, chicken, and dairy) .

I am also adding 4 food categories for foods that deserve special consideration;

nuts/seeds, herbs/spices, oils, and teas. I will be talking all about these as we go forward.

So what is a good healthy balance of these food groups for a healthy diet? Most dietitians feel your daily goals should be in these ranges:

Fruit and Veggies 45%

Whole grains 15%

Legumes 10%

Proteins from meat,

chick, dairy, poultry 15%

Nuts, seeds, herbs 10%

and spices

Other 5%

So your task over the next few days is to begin eating foods from these five major food groups and my special areas.

Today, I want to focus on one particular food group, Legumes

Legumes

Legumes, including beans, lentils, soybeans, peanuts and peas, are plants with seed pods that split in half. Beans provide a lot of bang for the buck. They are among the least expensive, powerhouse foods, chock full of fiber, complex carbohydrates, antioxidants and protein. Beans also contain a variety of vitamins and minerals and are a key component in lowering your risk of diseases including heart attack, diabetes, stroke and cancer.

Whats in Bob’s Red Mills 13 Bean Soup?

Ingredients: Navy beans, Black Beans, Red beans, Pinto beans, Baby Lima Beans, Large Lima beans, Garbanzo beans, Great Northern beans, Kidney beans, Black-eyed peas, Yellow Split peas, Green Split peas and Lentils. Also low in fat, cholesterol, sugar, and sodium. High in protein, fiber and carbohydrates.

Healthy Eats will feature our recipes for products on our blog as well as nutritional information in JeffE’sTake.

Healthy Eats, a nutritious soup receipe!
In this part of our journal I will be posting recipes on food that gives us, “the biggest bang for our bucks.”
So here goes- after a terrific snow season and learning to really ski, my body was feelin’ a real need to
repair itself with proper exercising and eating well. One of Jeff’s many hobbies is to research what would
make our lives healthy so that we can continue to country dance, ski, travel and do active activities for
as long as we want (a recent 7th birthday can get ya really thinkin’)!
Here’s our first joint effort in this area. Jeff found the 13 Bean Soup Mix by Red Mill (see products) that
offers some of the nutrients we need. He will post the importance of these nutrients on “JeffEsTake
Edition #2” within this Journal.
So, what did I do with this bean mix? That’s a lot of beans! I made a soup in my Dutch oven (or use any
large pot).

Carol’s 13 Bean Nutritious Blue Zone Soup
Ingredients:
2 onions, sliced diced
1-2 cloves of garlic cloves, chopped
2 tablespoons of olive oil
½ -1 small bag baby potatoes (halved)
1 bunch of Kale (sliced half inch)
4 carrots, peeled and sliced
½-1 cup collard greens/mustard greens, chopped
½-1 cup swiss chard, chopped
½-1 cup dandelions
½-1 cup broad leaf endive
½-1 cup Quinoa/Brown Rice or mixed (these grains complete the protein in beans)
½-1 bag of 13 bean soup mix (soak the night before, washed and drained)
12-14 cups of vegetable broth
1 can of diced tomatoes

Now that’s a Healthy Nutritious Recipe!
